Soup's on in the Crockpot

I'm linking up today with Kelly's Korner (and evidently we're thinking alike) to share some favorite Crockpot recipes.  Choosing a Crockpot favorite is almost impossible, but since I'm not a regular food photographer, I decided to share something we ate this week so that I could include a photograph.

Cooler temperatures always mean it's time to start putting soup back into our menu rotation.  With the rain and cold temperatures that we had at the beginning of the week, it was a given that the ingredients for taco soup would be cooking up on Sunday.


Ned picked up some Texas toast and made delicious cheese toast to eat with the soup.  I'm never sure if he feels like soup is hearty and "manly" enough to eat as a meal, but soups are a favorite for me because they're easy and make a ton.

Taco Soup

Ingredients
-2 lbs hamburger
-1 onion, chopped
-14.5 oz can corn
-16 oz can beans (whatever you prefer-I usually use light kidney beans)
-3 cans diced tomatoes
-1 packet taco seasoning mix
-1 packet Hidden Valley Ranch dressing mix

Brown hamburger and onion together and drain.  Mix hamburger/onion mixture with remaining ingredients in Crockpot.  Cook on low for 6 hours.  May also simmer on stove for 1-2 hours.

My MOST favorite Crockpot soup is actually Southwestern Tortilla Cheese soup.  I got this from another Kelly's Korner Crockpot link-up and have to share it even though I don't have a picture. {Not too sure my taco soup picture is so appetizing anyway.}

Southwestern Tortilla Cheese Soup

Ingredients
-4 oz diced, cooked chicken breast
-2 cups canned tomatoes with juice (I used diced)
-2 cups chicken broth
-1/2 cup salsa
-1 tsp taco seasoning mix
-1/2 cup diced onion
-1 can nacho cheese soup
-1 can cheddar cheese soup
-1/2 lb Velveeta, cut up
-tortilla chips (optional)
-sour cream (optional)

Mix all ingredients except chips and sour cream in Crockpot.  Cook on low for 5 hours, stirring occasionally.  The person who initially shared the recipe also said that it could be cooked on the stove top, cooking the first 6 ingredients for 5 minutes then adding the cheese and cheese soups and cooking until melted.  Ned and Avery like to eat this with tortilla chips, and I love it with a bit of sour cream with every spoonful.
